DAYTON — As businesses try to tackle inflation and bounce back from COVID-19, a popular food truck in Dayton is working to expand its business.
The “Pizza Bandit” is in the process of building a brick-and-mortar kitchen so it can make more pizzas for its customers.
During lockdown, they offered delivery, carryout and online ordering which help set them up for success.
The food truck is located in the Yellow Cab Tavern parking lot in Dayton.
Co-owner Brian Johnson said it’s always been challenging to fulfill all orders that come in and out of the food truck.

They are planning to build a kitchen at Yellow Cab Tavern.
“Of course, we feel for a ton of our friends who have been struggling and it really just comes down to you have to find opportunities to be innovative and find new ways to get to customers and reach customers so we’ve been fortunate to have a great fan base but of course, there’s still challenges,” Johnson said.
Johnson said he isn’t sure when the kitchen will be up and running but they’re excited for what the future holds.
